Back in 2007 Richard and Nikki Cooper quit the music industry and London and decided to move their life and children to deepest, darkest Dorset. They bought a dilapidated hotel in the centre of Bridport. After a lot of hard graft the Coopers brought the hotel back to life and in 2009 they were able to focus on the beautiful outbuilding and former stable at the back. They had a vision of creating a unique environment to enjoy the finest local produce at decent prices.

Naturally, being in Dorset meant Real Cider from small scale producers was available in abundance. Obtaining fine produce in this part of the world was no issue, what with local growers and suppliers popping up all the time, and fresh meat and fish all within a 10 mile radius (Hugh set up River Cottage nearby). Richard’s brother Andy, who also happened to be a chef, had just returned from Australia and the trio began experimenting with creating some extraordinary pizza, throwing out the Italian preconceptions and creating real British pizza made with their own sourdough base and, what some might call, controversial toppings.

The concept was born; fine food and crafted cider set within an alluring atmosphere. The only challenge left was building this beauty. The old stable was a wreck and appeared to house so much junk that it was near impossible to get through the door and take a look inside. Richard, not one to get his hands too dirty, put in a call to an old school friend, Martin, and the team began to piece the old stable back together.

That was it, The Stable came to fruition and went down a storm with townspeople and critics alike. It took a few years of fine tuning until the expansion started and now The Stable is growing across the South with the same approach to each building (still built by Martin – and Stan, another old school friend of Richard’s, has joined in!). Despite the growth, ingredients are still sourced locally to each venue. The ingredients on your Bridport Blaster will be entirely different from the ingredients on your Bristol Blaster and it’s this local approach that keeps The Stable grounded with its local community and continues to win the hearts of its customers.

Richard is a constant force of energy who pushes The Stable to be the best it can be. Delivering perfection every time is his goal. He’s very much a people person and has a huge amount of respect for craftspeople and the local economy. We think The Stable is somewhat a reflection of Richard: warm, welcoming, rough around the edges and built to age well.

Nikki’s impeccable taste makes her the head of all things visual – she dreams up our interiors, colour palettes, floor plans and fixtures working closely with our designers and craftspeople. Nikki plays a lead role in hiring our terrific staff. Her invaluable experience as the owner of a boutique hotel means she’ll be keeping a close eye on the purse strings and making sure we always offer great value to our customers.

Andy is the creative brain behind The Stable’s delicious pizzas. A true chef born out of the Navy. When he’s not in the kitchen dreaming up the next jaw dropping pizza special, he’ll be scouting for new Stable venues, ordering Naga chillies (he loves chillies) and ensuring everything is ship shape. Andy is a face you’ll see in all the sites. He lives, breathes and has even been known to sleep in The Stable, popping up everywhere. He’s a great guy but, as with any chef, avoid him when he looks busy!

Furniture Designer
Next time you’re sat on one of our benches, think of Rex. He drew that bench, built that bench, refined that bench and gave it a whole lot of love before repeating the process again with our tables and stools. He designs and builds all our furniture and his talents know no bounds, his latest project involves converting a complete wreck of a building into a home and huge workshop (so he has more space to make us more benches!) We can’t wait to see the results.


Kyle and Sid
Creative Department

Kyle originally worked for Rich and Nikki at The Bull Hotel in Bridport before meeting Sid and starting their creative studio. Now based just around the corner from The Stable Bristol, they design everything from adverts to tees, our website to our wall art. From the signs you see, to the boards you eat from, they’re constantly creating fresh ideas to make your Stable experience that little bit more special.


PR & Events Manager
Abi joined the Stable family in March 2015 and looks after all our marketing, PR and advertising. Being a real people person she loves the openings and meeting local folk and telling them all about the Stable. She’s loves her horses and being a foodie of course the pizza. Want to talk marketing? Operations Manager
Sam is Bridport born and bred and has been in and around The Stable in some way since the very beginning. Sam actually started working for us 3 years ago after he realised that sharing his knowledge of cider and all the foody delights of Dorset was close to his heart. It is safe to say that he always wants to have fun in everything he does. Sam works as one of our Operations Managers looking after half the sites whilst helping to run projects. Convenient he always seems to be at the centre of cider related projects.

LK (Laura-Kate)
Customer Relations
LK (Laura-Kate) joined The Stable in 2015 and has work in Bridport, Kew, Whitechapel and did the Flagon Wagon Tour from Dorset to London and LK now works in customer relations. You’ll see LK in many of our videos and photos and once got asked on tube “you the stable girl aren’t you?” (Claim to fame) She loves dancing, running and cider.

Kieran has worked in hospitality for 10 years, managing pubs in London and Surrey before turning to spreadsheets and purchasing, and now sources all of the amazing products that go into dishes at The Stable. He spends most of his time driving around the South West tasting some fantastic pizza toppings and ciders!

Social Media Manager
Amber’s the duchess of all things social media; photographer, hashtagger, wordsmith, socialite, a creative kinda gal. She lives for sunny getaways, has far too many shoes and is partial to a prosecco. When she’s not watching hilarious, cat compilation videos, she dreams of being a unicorn

Operations Manager
Roxie started at The Stable in 2013 as an Assistant Manager, after falling in love with group quickly moved up to running her first and never looked back. Now Operations Manager you could see her pop up in any location! Generally a happy person who laughs at her own jokes or something she heard yesterday. She has a big passion for car karaoke as she drives across the South coast.

Head of Cider
Born and bred in the West Country cider is in Tim’s blood. Originating from the site of the original restaurant he is at the driving heart of the stable ethos. Scouring the country for new ciders in our mascot flagon wagon is what he does best.

Executive Chef
Patrick is one of the originals! A part of The Stable since its birth in his hometown of Bridport. Developing his career within the company he has followed a journey all the way from Kitchen Porter to Executive Chef. If he’s not watching Louis Theroux he’s in the kitchen creating and thinking up what’s next on the Stable menu. He loves inspiration so if you have any wild ideas he’d love to hear from you.
