Back in 2007 Richard and Nikki Cooper quit the music industry and London and decided to move their life and children to deepest, darkest Dorset. They bought a dilapidated hotel in the centre of Bridport. After a lot of hard graft the Coopers brought the hotel back to life and in 2009 they were able to focus on the beautiful outbuilding and former stable at the back. They had a vision of creating a unique environment to enjoy the finest local produce at decent prices.

Naturally, being in Dorset meant Real Cider from small scale producers was available in abundance. Obtaining fine produce in this part of the world was no issue, what with local growers and suppliers popping up all the time, and fresh meat and fish all within a 10 mile radius (Hugh set up River Cottage nearby). Richard’s brother Andy, who also happened to be a chef, had just returned from Australia and the trio began experimenting with creating some extraordinary pizza, throwing out the Italian preconceptions and creating real British pizza made with their own sourdough base and, what some might call, controversial toppings.

The concept was born; fine food and crafted cider set within an alluring atmosphere. The only challenge left was building this beauty. The old stable was a wreck and appeared to house so much junk that it was near impossible to get through the door and take a look inside. Richard, not one to get his hands too dirty, put in a call to an old school friend, Martin, and the team began to piece the old stable back together.

That was it, The Stable came to fruition and went down a storm with townspeople and critics alike. It took a few years of fine tuning until the expansion started and now The Stable is growing across the South with the same approach to each building (still built by Martin – and Stan, another old school friend of Richard’s, has joined in!). Despite the growth, ingredients are still sourced locally to each venue. The ingredients on your Bridport Blaster will be entirely different from the ingredients on your Bristol Blaster and it’s this local approach that keeps The Stable grounded with its local community and continues to win the hearts of its customers.

The Stable wouldn’t be what is without the glorious people who provide us with our unique and ever-changing ciders, the suppliers of our fresh, local ingredients, and the Stablehands who pour the pints, roll the dough and paint the walls.

Instead of reeling out some corporate nonsense about what makes us Us, we thought it would be better to show you who we are! Meet the people…



Operations Director

A family man at heart, David is at home at The Stable. Driving development, he has taken the helm and introduced new roles like Cider Master during his time so far as Operations Director. Living a life on the road, you may see him in any of The Stable restaurants, flashing a smile and adding to his record for eating 26 Surf n’ Turf pizzas in one summer…


Furniture Designer

Next time you’re sat on one of our benches, think of Rex. He drew that bench, built that bench, refined that bench and gave it a whole lot of love before repeating the process again and again with our tables and stools. He designs and builds all our furniture and his talents know no bounds.



PR & Events Manager

Abi joined the Stable family in March 2015 and looks after all our marketing, PR and advertising. As a real people person, she loves the launch nights where she can meet local folk and tell them all about The Stable and her love of pizza. Living life at a gallop, she is a horse fanatic too. Operations Manager

Sam is Bridport born and bred and has been in and around The Stable in some way since the very beginning. As a manager, Sam started working for us three years ago, after he realised that sharing his knowledge of cider and all the delicious delights of Dorset was close to his heart. Sam likes to have fun with everything he does and works as one of our Operations Managers, looking after half the sites and helping to run projects and events. He always seems to be at the centre of our cider-related projects. Coincidence? We think not.



Kieran has worked in hospitality for ten years, managing pubs in London and Surrey before turning to spreadsheets and purchasing. He now sources all the amazing ingredients that go into the dishes at The Stable. He spends most of his time driving around the South West tasting some fantastic pizza toppings and ciders – it’s a hard job, but somebody’s got to do it!


Operations Manager

Roxie started at The Stable in 2013 as an Assistant Manager, and after falling in love the job, quickly moved up the ranks and never looked back. Now Operations Manager, you can see her pop up in any location! She is a happy person who laughs at her own jokes and has a passion for car karaoke, which she practices as she drives across the South Coast.


Executive Chef

Patrick is one of the originals! Another Bridport native, Patch has been a part of The Stable since its birth. Developing his career within the company, he has followed a path from Kitchen Porter to Executive Chef. When he’s not deeply engrossed in a Louis Theroux documentary, he’s in the kitchen creating what’s next on The Stable menu. He loves inspiration, so if you have any wild ideas he’d love to hear from you.


The Stable Cider Ambassador

Gabe otherwise known as The ‘Ciderologist’ became our Cider Ambassador in January 2018. Education is a priority, focusing on our 23 Cider Masters, he puts together all the exams but also advices us we’ve got the best cider on tap. Big plans ahead for our Cider ambassador, watch this space.


Graphic Artist

Graphic artist Matt is responsible for the hand drawn artwork and chalkboards across our sites since joining the team in 2017.
When he’s not scribbling on our walls, his love of cider is such that you might catch him back at The Stable in the evening, performing with his 60s rock and roll band, The Modern Apes.
